Almond Tuiles (杏仁瓦片)

Ingredients:
¶ Confectioner's sugar: 180g
¶ Cake flour: 50g
¶ Corn starch: 10g
¶ Egg whites: 80g
¶ Eggs: 120g
¶ Un-salt butter: 40g (melted)
¶ Almond flakes: 200g
Preparation:
Step1 | In a bowl, using a whisk combine confectioner’s sugar, egg whites and eggs. Add the cake flour and corn starch and mix well. |
Step2 | Add the melted butter, almond flakes and mix well. Set aside. |
Step3 | Brush melted butter thoroughly on parchment paper. Let butter solidify. |
Step4 | Drop teaspoon amounts on the buttered paper and flatten into a disk using a fork occasionally dipped in butter. Alternatively stencil the batter into 9 cm diameter circles on the buttered parchment paper. |
Step5 | Bake at 170℃/170℃ until golden brown, about 15~20minutes. (10 minutes+5~10 minutes turn-round) |
Step6 | Upon removal from oven, use a metal spatula to lift the cookies of the tray, and place on a rolling pin to obtain the tuile shape or place upside down in a tuile sheet. |
Step7 | After cooling place in a tight fitted container. |
PS: Homemade oven 160℃for 12~15 minutes。
