Cocoa Almond Cookies (可可杏仁小西餅)

Ingredients:


   Un-salt butter: 240g


   Confectioner's sugar: 240g


   Salt: 1/4 tsp


   Eggs: 96g


   Cake flour: 432g


   Cocoa powder: 48g


   Baking Soda: 1/2 tsp


   Almond flakes: 160g


 


Preparation:

























Step1



In a bowl, cream 1 stick of butter with confectioner’s sugar until light and fluffy. Add salt and mix well.



Step2



Add eggs and mix well.



Step3



Mix in cake flour, cocoa powder, and baking soda.



Step4



Add almond flakes and mix well.



Step5



Division/Plastic: divide dough into two pieces and roll each piece into a rectangle (4x4x35cm), put into the refrigerator and allow the dough to harden.



Step6



Cut each roll into 35 slices using a very sharp knife or dental floss, total 70 slices (70 slices x 17g = 1190g). Meanwhile, preheat oven to 180/150.



Step7



Bake in preheated oven 180/150for 25 minutes (15+10 minutes turn-round and change temperature 180/0) until dough bulge.



PS: Homemade oven 170for 12 minutes
