Cocoa Almond Cookies (可可杏仁小西餅)

Ingredients:
¶ Un-salt butter: 240g
¶ Confectioner's sugar: 240g
¶ Salt: 1/4 tsp
¶ Eggs: 96g
¶ Cake flour: 432g
¶ Cocoa powder: 48g
¶ Baking Soda: 1/2 tsp
¶ Almond flakes: 160g
Preparation:
Step1 | In a bowl, cream 1 stick of butter with confectioner’s sugar until light and fluffy. Add salt and mix well. |
Step2 | Add eggs and mix well. |
Step3 | Mix in cake flour, cocoa powder, and baking soda. |
Step4 | Add almond flakes and mix well. |
Step5 | Division/Plastic: divide dough into two pieces and roll each piece into a rectangle (4x4x35cm), put into the refrigerator and allow the dough to harden. |
Step6 | Cut each roll into 35 slices using a very sharp knife or dental floss, total 70 slices (70 slices x 17g = 1190g). Meanwhile, preheat oven to 180℃/150℃. |
Step7 | Bake in preheated oven 180℃/150℃for 25 minutes (15+10 minutes turn-round and change temperature 180℃/0℃) until dough bulge. |
PS: Homemade oven 170℃for 12 minutes。
