Chicken Consommé a la Julienne(蔬菜絲雞清湯)

Ingredients:
¶ Chicken breast: 500g (minced)
¶ Onion: 1 medium size (2 pieces of onion; Julienne 0.2x02.x6cm:100g)
¶ Carrot: 100g (Julienne 0.2x02.x6cm)
¶ Celery: 100g (Julienne 0.2x02.x6cm)
¶ Leek: 100g (Julienne 0.2x02.x6cm)
¶ Bay leaf: 2 leaves
¶ Egg white: 2
¶ Ice cube: 10 large size (500g)
¶ Chicken stock: 800cc
¶ Salt and Pepper: pinch (to taste)
Preparation:
Step1 | Cut all vegetables (onion, carrot, celery, leek) with Julienne, Keep 2 pieces of onion for baking. |
Step2 | Minced chicken breast and add 1/4 of minced all vegetables (onion, carrot, celery, leek), pour in a large bowl and add bay leaves, eggs white and mix well. |
Step3 | Pour in a saucepan and mix with iced chicken stock until mixed up completely. Heat a saucepan over medium-high heat and whisk quickly to maximum volume until eggs white mixture becomes floating meatball (10 minutes), add 2 pieces of onions and simmer 45 minutes until sauce becomes brown color, turn off heat and filter off floating meatball. |
Step4 | Pour the consommé and mix 3/4 vegetables (onion, carrot, celery, leek) with Julienne, cook the consommé until boiling and season with a pinch of salt and pepper. |
